Not only does lacto-fermentation preserve foods like kimchi and sauerkraut, but it also greatly increases their nutritional value and flavor. Join Dr. Mark “Merriwether” Vorderbruggen for this hands-on experience in the simple art of creating lacto-fermented foods using local wild plants! Students will leave with their own batch of fermenting greens as well as the knowledge to make more on their own.
Please dress for the weather and wear clothes you won’t mind getting messy.
Instructor bio: Dr. Mark Vorderbruggen brings his background as a Ph.D. in chemistry to the world of Houston’s edible and medicinal wild plants. He is the author of “The Idiot’s Guide: Foraging,” runs the informative “Foraging Texas” website, formulates medicinal plant remedies through Medicine Man Plant Co., and is always educating about useful plants on TV, online, and in person.
